Meatball Monday: Kid Friendly Meatballs for Game Day

I started doing it a couple years ago after Runner was born when I was working in news and waking up at 2:30 a.m. Since I had a pretty difficult schedule, routine was key, and that included making dinner several nights a week at an early time to get to bed at a decent hour.
Meatballs are easy, can be healthy and are something the whole family will enjoy. So, knowing every Monday I was going to make meatballs, took the stress out of dinner time at the start of the week. And it became something fun I started sharing with people on Instagram each week. I’m going to try to share more recipes here on the blog, but in the mean time, go here to see past videos.
Most of the meatballs I make I would consider “kid-friendly”, but this recipe is really simple and sneaks in a couple vegetables. They’re perfect for kids and adults at your game day party!
Chicken Meatballs with Spinach and Carrots
1 lb ground chicken
1 handful chopped spinach
1/4 cup shredded carrots
1/3 cup Panko breadcrumbs
1/2 cup parmesan
1 tsp garlic powder
salt & pepper
splash of water
Set oven at 400 degrees. Line a baking sheet with parchment paper. Combine all ingredients in a bowl, but don’t over mix. Roll 1-2 inch balls and place on baking sheet. Bake for 25 minutes, turning half way though. *Optional: serve with ketchup or ranch dressing.
I also put together a snack tray for kids that was super simple and is great for a game day gathering or play date. I used veggies, chips, pretzels, crackers and cheese cubes with a little hummus in the middle. You’ll find yourself snacking on this one too!
