"Lucky Chow" St. Patrick's Day Snack
Like so many others out there, I am a Thin Mint freak. Can’t get enough of the delicious crunchy mint chocolate Girl Scout cookies. (*Tip: keep em in the freezer. The best way to eat them). So, I kind of stocked up this year and decided I wanted to incorporate them into a fun St. Patrick’s day themed snack.
We’ve all heard of “puppy chow” (or if you’re like my husband, maybe you’re scratching your head right now. Where have you been??) It’s basically Chex cereal coated in chocolate, peanut butter and powdered sugar. What a time to be alive, right? It’s addicting. As addicting as Thin Mints, so let’s put them together, shall we? And how about we throw in some Lucky Charms marshmallows to make it cute and fun for St. Patrick’s Day? Done.
Lucky Chow
4 cups corn or rice Chex
1 cup Lucky Charms marshmallows (I picked out the marshmallows, but you could use the cereal too if you want)
1/2 sleeve Thin Mints cookies broken into pieces
1 cup chocolate chips
1/2 cup peanut butter
2 Tbl butter
1 cup powdered sugar
Put dry Chex cereal in bowl. Melt chocolate then stir in peanut butter and butter until mixed. (Meanwhile, parents, you can ask the kids to help pick out the marshmallows!) Once it’s smooth, pour the mixture over Chex. Put into a large Ziplock bag and slowly add in powdered sugar. Then shake until Chex is coated. Spread out on parchment paper to dry. Add in Thin Mints and marshmallows. Happy snacking!
